In Search of the Perfect Paella

  It comes as a bit of a shock to learn that there are rice-fields in Europe. The fields are those of Albufera, just twenty minutes by road from Spain's third city Valencia. The products of Albufera are amply on display at Valencia's huge Central Market, the biggest in Europe. All the ingredients needed for making the famous Spanish rice dish paella are on sale at the Market. Possibly the best place to try an authentic Paella Valenciana is at the 104 year-old restaurant La Pepica, patronised by such notables as Ernest Hemingway and the King and Queen of Spain.
