Tandoori, Mughlai and South Indian cuisines are well known in the West. But the foods of north-eastern India, from the exotic dishes of Sikkim (including yaks’ cheese and sautéed orchid buds) to the rare chital fish of Assam and the rich pork dishes of Meghalaya, are less well-known.
