A soft-textured Chaource cheese, in the tasting room at the Museum of Cheese

The little village of Les Riceys, in France’s champagne district, is the only place in France producing no fewer than three AOC (Appellation d'Origine Contrôlée) wines. A superb accompaniment to the wines of Les Riceys is the AOC cheese known as Chaource, a soft white variety with a creamy texture, slightly acidic and salty flavour, and an aftertaste of meadowsweet mushrooms. The cheese takes its name from the village of Chaource, just 17 km west of Les Riceys. Chaource is also home to the fascinating Museum of Cheese.
